The Recipe for Adventurous Chestnut Stew
- 1 kilo fresh chestnuts
- Crème fraîche
- Salt and pepper
- Fresh chives to taste
- Gather fresh chestnuts and make an incision in the skin of each chestnut.
- Roast the chestnuts over the campfire until the skin opens and the flesh is soft.
- Peel the roasted chestnuts and set aside.
- Peel the celeriac and cauliflower, cut both into small pieces and cook them together in a pan with water and a tablespoon of herb broth until soft.
- Drain and mash the celeriac and cauliflower. Add a few tablespoons of crème fraîche to make a creamy puree.
- Mix the roasted chestnuts into the puree.
- Season the puree with salt and pepper and finally sprinkle with finely chopped fresh chives.
